Blondies & Apple Sauce for Kala – Part 1

If im not mistaken, today is d 3rd time I brought Blondies to office, in a month; upon request ;p ….& also to my own craving. But today’s is special. I brought along apple sauce & cream crackers. I figure it’l b somewhat meaningful to put both blondies & apple sauce in the hamper along with 5 other things dat kak Yan has prepared for Kala as a farewell gift. I think those r among d ‘ergonomical delicacies’ dat we’ve shared all this while, rite Kala? Hmm…oh, not 2 4get d bread fritters but un4tunately no tengo tiempo to make it…! Hehe..

Juggling between blondies, apple sauce, laundry & dirty dishes…I finally hit the hay at 12 something… I m thankful, satisfied & cured- err…due 2 d therapy dat is :D Watsmore, theres no better therapy in making other people happy. I hope u r happy Kala, tho’ ure leaving us soon. Im sure u have fond memories here in KMM :)

& 2 fulfil Brenda’s & other’s request, here’s d recipe I took fr http://www.elise.com/recipes/archives/007188blondies.php . of course i didnt do mine accordingly bt ure free 2 modify whenever/wherever applicable ;p

Blondies

· 1/2 cup of butter, melted
· 1 cup of tightly packed dark brown sugar
· 1 egg, lightly beaten
· 1 teaspoon of vanilla
· 1/2 teaspoon baking powder
· 1/8 of baking soda
· Pinch of salt
· 1 cup of all-purpose
· 1/3 cup of butterscotch chips (chopped walnuts and chocolate chips are equally tasty)
1 Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.
2 Add the egg and vanilla extract and whisk.
3 Add the flour, baking soda, baking powder, and salt, mix it all together. Add the butterscotch chips or other mix-ins.
4 Pour into the pan and spread evenly. Bake for 20-25 minutes or until a toothpick comes out clean. Allow to cool. Cut into squares and serve.
Makes 9 blondies.

u may substitute d butter wit margerine & thus no need for salt really. u cn even make blondies witout d egg but ensure a lot of fresh milk added tho'. i put milk either way still :)
